Many of us are struggling to get to the shops or find the right ingredients at the moment, and this can make cooking a bit of a challenge. So we’re sharing some low-cost, healthy recipes that are quick and easy to make. This delicious, warming soup recipe takes just 25 minutes and is a great boost for your immune system. If you don’t have all the vegetables, you can easily substitute for others.

 

 

Antioxidant Vegetable Soup

 

Ingredients: 

½ Sweet Potato

1 Large Carrot

1 Onion – lightly fried first

1/2 Swede

1 large Parsnip

Handful of Red Lentils

Some chopped Red and Yellow Peppers

Vegetable Stock Cube, with 1.5 Litres water

Salt and Pepper

Mixed Herbs

 

Method: 

  • Lightly fry the onions
  • Dice all vegetables
  • Mix together vegetables and onions in a large pan
  • Add salt and pepper, herbs and stock. Boil for 10 minutes and then leave to simmer for 15 minutes until vegetables are soft.
  • Mash vegetables or puree with hand blender.
